ou will find a very high quality of oil all over Provence by purchasing
from small village mills, larger mills and co-operatives that
group together olive harvests from several owners. In certain
municipal mills, because of the production volume you will not
always find a label on the bottle. You may even often find a recycled
soft drinks or Perrier bottle enjoying a new lease of life filled
with this precious juice.
In the smaller mills, you can only purchase oil during the oil
production season. It is recommended to phone beforehand as the
majority of olive growers take back their oil.
A small municipal mill processes between 10 and 20 tons of olives
per year using traditional methods. The larger mills process more
than 200 tons, i.e.: more than 20,000 litres of oil. On average,
mills and co-operatives process between 30 and 100 tons of olives
per year.
You will find shops specialising in the olive, who offer oils
from various AOC labels, from different valleys and mills and
of course an entire range of table olives and olive-based products
(tapenade, anchoïade (anchovy paste), aïoli, etc..)
